Quick healthy apple-cake cooked with pan

One of the best thing is to have a good and healthy snack to enjoy between coding and slicing. But as it always takes so long preparing, oven cooking and washing, one prefers to buy ready snacks.
So, as I have found an easy quick recipe to cook a delicious apple cake, I want to share it with you all. Oil and yogurt (instead of butter) will make the cake lighter.

Preparing our own food is much much better rather than buying ready food, because we do not know how many preservatives and chemicals are in them, things that can compromise our health and so also our concentration and efficiency.

Delicious and easy apple cake

Ingredients

Flour 250gr
White yogurt 170gr
Eggs 2
Sugar 80gr
Oil 60ml (2 tbsp)
Baking powder
Apple 1
A handful of raisin
Cinnamon powder
Lemon
A nonstick 24cm pan

Method

If raisin is too dry, put it in some water to make it softer, 10 minutes before starting.
With the electric whisks, whip the eggs and the sugar until they become a foamy mixture.
Add the yogurt, the sifted flour, the baking powder and oil. After having stirred mixture nicely and obtaining a nice smooth mixture, squeeze  the raisin (if it was in water) and add it to the mixture.
Finely slice the apple and sprinkle some lemon juice; if you wan you can add some cinnamon powder on the apples slices.
Now oil the pan with a little bit of oil (it should not remain liquid in the pain), warm up the pan and then pour the cake mixture in it. Then distribute the slices of cake in the mixture slightly pushing.
Cook the cake at very low flame (on the smallest flame), covered with a lid, for about 12-15 minutes.
Then, with the help of the lid or a plate, turn the cake upside down, just like you do with an omelet.
Let it cook for other 12-15 minutes.
When it is ready, just let it slip on a plate and enjoy it!
